Grapes are grown on the warm South-East facing slopes of the granite-rich Paarl Mountain. Grapes were picked early morning by hand and taken to the cellar where they were destemmed and lightly crushed. The wine was Fermented in a small open top fermenter where the grapes could be manually worked for extraction of colour, aroma and tannin. Thereafter the wine was aged in 225 L French and American oak barrels for 20 months. Only the best barrels (8 in total) were selected for this bold wine. For this vintage, one Swartland Shiraz barrel was used to round the wine off, complementing the final wine and elevating the Tempranillo character further. The wine was racked from the barrels, settled and bottled with a rough filtration. Upon release, we’ve left the wine to age in bottle for a year. This wine is bold and structured and can keep for up to a decade from vintage.
