Tasting Notes

Ruby red in colour. The nose opens with ripe black berries, violets and a subtle hint of forest floor. The palate follows with fresh plum and blueberry flavours. Supple tannins carry the wine into a clean, structured finish. It’s elegant, fresh and true to the cool, late 2021 vintage. Enjoy now or over the next 4–5 years.

The Fairview Cabernet Sauvignon 2021 comes from trellised vineyards in Stellenbosch and Darling. These coastal sites benefit from steady sunlight and good airflow thanks to dedicated canopy work throughout the season. This slower ripening shaped the wine’s fresh and refined style.

The grapes were handpicked at 24.5° Balling. The cellar team split the harvest into two portions: half fermented in wooden foudres and half in stainless-steel tanks. Extended skin contact added depth before the wine moved into French oak barrels for malolactic fermentation and 18 months of maturation. Twenty percent new oak added gentle spice and structure.

Cabernet Sauvignon 2021 is polished and expressive. Black berries, violets, plum and blueberry shape the wine’s character, while supple tannins create a smooth, structured finish. It’s a refined expression of fairview wines and an excellent example of South African red wine from respected wine farms South Africa.
