Fairview Caldera 2022

The Fairview Caldera 2022 blends Grenache Noir, Shiraz, Mourvèdre and Cinsault from carefully selected vineyard sites across Piekenierskloof, Darling and Paarl. The Grenache comes from old vines in Piekenierskloof and a prime “stok-by-paaltjie” vineyard on Paarl Mountain. Shiraz adds cooler-climate lift from Darling and Fairview’s highest mountain slopes. Mourvèdre grows on the lower slopes of the Fairview farm, while the Cinsault comes from a 1994 bush-vine block near the Taal Monument.

The grapes were hand-harvested from mid-February to early March. The team hand-sorted the fruit and fermented each component in open-top French oak foudres. The Grenache portion included 20% whole bunches to add spice and aromatic lift. After fermentation, the components matured separately for nine months in foudres, older French oak barrels and stainless steel. The wine was lightly filtered before bottling.

Caldera 2022 is bright and expressive with berries, fynbos, red cherry and spice. The palate stays fresh and elegant with a long, dry finish. It reflects the modern Rhône-inspired style of fairview wines and the diversity of top wine farms in South Africa.
