The palate is light to medium bodied and fresh, showing flavours of red cherry and spice with subtle complementary oak. The wine finishes long, dry and slightly pithy, making it a natural partner for food.

Fairview Caldera 2023 is a blend of Shiraz, Grenache Noir and Mourvèdre from exceptional vineyard sites. Shiraz forms the largest component, sourced from cool-climate vineyards in Darling and Paarl. The Grenache Noir comes from an old vine vineyard in the Piekenierskloof valley and the Stok-by-Paaltjie single vineyard on Paarl Mountain. Mourvèdre grows on the lower slopes of Paarl Mountain on the Fairview farm.
The fruit was harvested during February 2023. The grapes were hand-picked early in the morning, sorted and fermented separately in open-top French oak foudres. Twenty percent whole bunch Grenache Noir was included to enhance fruit and spice expression.
After fermentation, the components matured separately in French oak foudres, French oak barrels and stainless steel for nine months before careful barrel selection, blending and bottling. The result is an elegant red blend with fresh fruit, spice and structure.
