Tasting Notes
The wine shows a deep ruby colour. The nose brings wet forest floor, fresh mint, red plums, and black cherry. The palate is dense and rich with dark fruit, herbs, and a touch of sweet tobacco from the oak. It has firm, chalky tannins and a long, elegant finish.

Drie Papen takes its name from the three hills on the Darling farm that resemble the Pope’s mitre. The fruit comes from cool-climate vineyards in Darling and Stellenbosch. The blend consists of 60% Cabernet Sauvignon, 20% Merlot, and 20% Petit Verdot.
The cellar team hand-sorted the grapes before fermentation in foudres. They used whole berries for the Cabernet Sauvignon component. Daily punch-downs kept the cap submerged during peak fermentation. Each component was basket-pressed and transferred to French oak for malolactic fermentation. The final selection includes 50% new barrels. Only ten barrels were produced, making this a small-batch expression within the fairview wines family.
The result is a dark, structured, and elegant blend with depth, freshness, and long ageing potential.
