Bloemcool Heeltros 2022 is a bold, lively Syrah made from whole-bunch fermentation. Handcrafted with real care, it shows bright fruit, peppery spice, and the natural character of high-lying Paarl vineyards.
The wine shows a deep blood-red colour with a touch of purple. Aromas of black and white pepper, lavender, fynbos, and warm spice rise from the glass. The palate brings fresh red plum, dark berries, clove, and cardamom. Soft tannins and a long, smooth finish complete the experience.
This Syrah comes from one of Paarl’s highest vineyard blocks. The team picked the grapes early in the morning to keep the fruit cool. They placed seventy lug boxes of whole bunches into open-top stainless-steel fermenters.
Halfway through, the winemaker and intern crushed the bunches by foot. This step released juice and kickstarted natural fermentation. Gentle punch-downs followed each day. These kept the fruit intact and built texture.
Carbonic fermentation added freshness and fine tannins. After fermentation, the team used a basket press and moved the wine into one 500L and one 225L French oak barrel. It matured for twelve months and stayed unfiltered to keep its natural character.
