This Syrah was made the old-school way by hand, and by foot. The grapes were picked early in the morning and thrown straight into the fermenter as whole bunches. Halfway through, we jumped in (literally) to stomp the fruit and get things going. Fermentation kicked off naturally and took its time over nine days. After pressing, the wine spent a year resting in old oak barrels before bottling no fining, no filtering, just pure expression.
