Crafted from Shiraz and Cabernet Sauvignon, it’s an aged red wine that captures the soul of the Cape Winelands.
The 2021 season brought mild weather and steady ripening. Because of that, the grapes reached perfect flavour and balance. Shiraz from Darling and Paarl adds spice and depth, while Cabernet Sauvignon from Stellenbosch provides structure and length. The team visited each vineyard often, tasting and checking fruit to decide the perfect picking time.
In the cellar, the winemakers focused on detail. They handpicked and sorted the grapes, then started natural fermentation in open oak foudres. Gentle punch-downs released colour and flavour, while longer skin contact added texture. After pressing, the wine rested in French oak barrels for twenty months, forty percent new. Each decision aimed to show the fruit’s true character.
The final blend is rich and expressive, filled with black plum, cherry, and hints of peppery spice. Smooth tannins carry the flavours into a long, balanced finish.
