The fruit comes from bush vines planted in 2001 on koffieklip soils. These dryland vines produce low yields, resulting in concentrated flavour and depth. The cellar team harvests the grapes in the cool morning, then destems and crushes them before a short cold soak to build colour and flavour. Natural fermentation follows, with gentle punch-downs to guide extraction. The wine then matures in older French oak barrels for 10 months, allowing texture and complexity to develop while keeping the fruit expressive.
