This case includes six bottles of Fairview Back’s Blend White 2025, a modern Cape white that blends Mediterranean and classic varieties. Roussanne and Viognier grow in Paarl on decomposed granite soils, where trellised, drip-irrigated vineyards sit around 300 metres above sea level. Sauvignon Blanc comes from Darling, where dryland farming and granite soils add lift and freshness.
The team harvested the grapes early in the morning and delivered them cold to the cellar. After destalking and gentle pressing, the free-run juice settled for two days. Fermentation took place in stainless-steel tanks at cool temperatures to preserve fruit purity. The wine then rested on fine lees for six months to build texture. A small portion of oaked Chenin added extra richness before stabilisation, filtration, and bottling. The result is a clean, fresh, and fruit-forward white that drinks beautifully when chilled.
