Grapes were destemmed, crushed and fermented separately in open top stainless tanks. Pump overs and punch downs (Pigeage) were done 3-4 times per day during fermentation to extract flavour, colour and tannins from the berries. Finally, the wine was pressed and matured in barrels for 18 months in medium toasted oak barrels, assisting in taming the tannin.

Food Pairing

A great match for any South African inspired braai - Be it with venison from the Karoo or chops from the shops as the structure compliments an array of flavours. Great company to the Fairview blue mould cheese range or warm spicey stew.
