The Fairview Stellenbosch Cabernet Sauvignon 2018 comes from trellised vineyards in Stellenbosch, where good canopy management ensures balanced ripening. Leaf removal, tipping and shoot positioning help sunlight reach the fruit, giving the grapes clean, focused flavour.
The team harvested the Cabernet in mid-March at 25° Balling. They worked with two components: half fermented in wooden foudres, and half in stainless steel tanks. The wine stayed on the skins for extended maceration to build structure and depth. After fermentation, each component moved to oak for malolactic fermentation and long maturation. After twenty-four months in French and American oak.
