The Fairview Cabernet Sauvignon 2020 comes from trellised vineyards in the Stellenbosch region, where careful canopy management ensures balanced ripening. Leaf removal, tipping and shoot positioning help sunlight reach the bunches and shape clean, focused fruit.
The team harvested the grapes in mid-March at 24.5° Balling. They split the wine into two fermentation styles: half in wooden foudres and half in stainless steel tanks. Extended skin contact built depth and helped refine the tannins. Afterwards, each component went into French oak for malolactic fermentation and 18 months of maturation, with 20% new oak adding structure.
The result is a Cabernet filled with blackcurrant, red berries, herbal notes and subtle vanilla. Smooth yet firm tannins give the wine length and focus. It’s a balanced, modern expression of Fairview wines and a great choice for fans of South African Cabernet.
