This case includes six bottles of Fairview Cabernet Sauvignon 2021, crafted from grapes handpicked at 24.5° balling. The final blend combines two components. Half of the fruit fermented in wooden foudres after hand-sorting, while the remaining half fermented in stainless-steel tanks. This approach adds both texture and freshness to the wine.
Extended skin maceration built structure and depth before the wine moved to French oak barrels for malolactic fermentation and ageing. Twenty percent new oak added subtle complexity without overpowering the fruit. After 18 months in barrel, the team blended the components and bottled the wine. The result is a Cabernet Sauvignon that already drinks well, yet promises added complexity and longevity with time.
