Fairview Cabernet Sauvignon 2022 Case of 6 brings together six bottles of this structured red wine made from fruit grown in the Stellenbosch and Darling regions. Careful canopy management, including leaf removal, tipping and shoot positioning, helps ensure sunlight reaches the grapes and promotes even ripening.
The team harvested the grapes in March 2022 at 24.5° Balling. Half of the fruit fermented in wooden foudres after hand sorting, while the remaining portion fermented in stainless steel tanks. The wine stayed on the skins for extended maceration before moving to barrels for malolactic fermentation and maturation.
The wine matured in French oak barrels, including 20% new oak. After 18 months of ageing, the winemaking team blended the components to create a balanced Cabernet Sauvignon with depth and structure.
