Caldera is a blend of three Mediterranean grape varieties from exceptional vineyards sites. The Grenache Noir is from an old vine vineyard in the Piekenierskloof valley and our best Paarl Mountain site (Stok-by Paaltjie single vineyard). The Shiraz grapes were sourced from a cool climate Darling site as well as our highest mountain site on the Fairview property. The Mourvèdre is from the lower slopes of Paarl Mountain on the Fairview Farm, and the Cinsault from a bush vine block planted in 1994 just below the Taal Monument.

Tasting Notes

Opaque bright red in colour with fruit forward notes of summer berries, fynbos and a hint of pepper. Light to medium bodied, fresh on the palate with flavours of red cherry, spices and subtle complimentary oaking with an indulgent and lengthy dry finish perfect for pairing with food.


More details

The fruit was hand-harvested in the early morning. The Grenache Noir, Shiraz and Mourvèdre grapes were all hand sorted and fermented in foudre (open-top French oak barrels). The Grenache Noir had 20 % of whole bunch grapes added to the bottom of the foudre, for added spice and fruit. The individual components were matured separately in French oak foudre, 225L French oak (2nd to 4th fill) French oak barrels, and stainless steel for 9 months before blending, light filtration and bottling.
