The palate is light to medium bodied and fresh, showing flavours of red cherry and spice with subtle complementary oak. The wine finishes long, dry and slightly pithy, making it a natural partner for food.

Fairview Caldera 2023 Case of 6 includes six bottles of this elegant red blend made from Shiraz, Grenache Noir and Mourvèdre. Shiraz comes from cool-climate vineyards in Darling and Paarl. Grenache Noir grows in an old vine vineyard in the Piekenierskloof valley and the Stok-by-Paaltjie single vineyard on Paarl Mountain. Mourvèdre grows on the lower slopes of Paarl Mountain on the Fairview farm.
The team harvested the grapes during February 2023 and picked them early in the morning. They sorted the fruit by hand and fermented each variety separately in open-top French oak foudres. They added twenty percent whole bunch Grenache Noir to enhance fruit and spice. The wine matured for nine months in French oak and stainless steel before blending and bottling.
