Fairview Chardonnay 2023 is crafted from dryland fruit grown in cool coastal conditions, where deep Oakleaf soils and maritime influence help create elegance and freshness. The result is a Chardonnay with purity of fruit, refined texture, and vibrant balance.
The cellar team harvests the grapes before dawn to preserve freshness. Part of the wine ferments in stainless steel for bright fruit character, while the wooded portion ferments in French oak barrels. Ten months on the lees with regular stirring adds texture and complexity.
