The Charles Back Fairview Brut 2022 is a fresh, modern Cap Classique made from three Rhône varieties: Viognier, Grenache Noir and Grenache Blanc. These grapes come from Fairview’s trellised vineyards on the slopes of Paarl Mountain, where cool mornings help retain natural acidity and bright fruit.
The team handpicked the fruit in late January and early February 2022 and kept the bunches chilled from vineyard to cellar. They whole-bunch pressed the grapes gently and used only the free-run juice. Each variety fermented separately in stainless steel before the base wine rested on the lees for five months.
The second fermentation took place in the bottle under crown cap, following the traditional Cap Classique method. The wine then matured on the lees for 26 months before riddling and disgorgement.
Brut 2022 is crisp and vibrant with green stone fruit, apples, lime and flinty mineral notes. A fine mousse and a dry, zippy finish give the wine freshness and lift. It’s an expressive Cap Classique that reflects the innovative, Rhône-variety approach of Fairview wines.
