In true Fairview style, we’ve selected unconventional Rhone varieties from our own vineyards to make this exciting Cap Classique. This year we used Grenache Blanc and Grenache Noir for the base wine. This resulted in a crisp, fresh wine with lower residual sugar, making it even more age worthy. – Anthony de Jager

Food Pairing

Fresh seafood and summer salads with salmon trout and soft cow’s or goat’s milk cream cheese.

Tasting Notes

Pale gold colour with a tinge of green and vivacious fine bubbles. Aromas of green apple, flint and brioche on the nose. The palate is clean and fresh with nuances of tart apples, limes and a hint of freshly cut blossoms. Has a generous mousse and a super fresh, zippy finish.


More details

The grapes were transferred to the press by hand and gently whole bunch pressed. Only the free run juice was used. After the juice settled, the clear juice was transferred to stainless steel tanks for fermentation. The blended wine was left on the lees in tanks for 5 months before bottling for the second fermentation, which took place in the bottle under crown cap (traditional Cap Classique). The wine was left to mature on the lees for 29 months before it was disgorged.
