Ideal with sweet-and-sour dishes, Southeast Asian cuisine, pork with caramelised apple, seafood, pasta or risotto. Fairview goat’s cheese is a perfect match.
Pale straw colour in the glass. The wine shows sweet tropical fruit, candied pineapple, stone fruit and subtle citrus notes. The palate is medium bodied with yellow fruit and a touch of creaminess from the barrel component. A lingering, crisp dry acidity lifts the finish. Will improve over the next 1–2 years.
The Fairview Chenin Blanc 2025 comes from two vineyard sites, a dryland bush-vine block in Darling and south-facing trellised vines on Paarl Mountain. Both sites grow in decomposed granite soils, giving the wine its bright fruit and natural freshness.
The grapes were picked early in the morning and delivered cold to the cellar. After gentle destemming and pressing, the free-run juice settled for two days. Most of the wine fermented in stainless steel for purity, while 20% fermented in older French oak for extra texture. The wine rested on fine lees for three months before blending and bottling.
Chenin Blanc 2025 is lively, generous and refreshing. Tropical fruit, candied pineapple, stone fruit and citrus notes shape the nose and palate. Creaminess from the oak adds softness, while crisp acidity keeps the wine bright and dry.
