Fairview Chenin Blanc 2026 reflects the character of two distinctive vineyard sites. Bush vines from Darling contribute freshness and vibrant fruit, while south-facing vineyards on Paarl Mountain add texture and richness. Together, these sites showcase the versatility of Chenin Blanc.
The team harvests each parcel in the cool early morning before gently pressing the grapes. They cold ferment the free-run juice in stainless steel tanks. At the same time, they ferment around twenty percent of the wine in older French oak barrels to build extra complexity. After fermentation, the wine rests on its fine lees for three months. Finally, the team blends the different components before bottling.
