This case includes six bottles of Fairview Darling Riesling 2024, sourced from unirrigated vineyards planted in 2003 outside Darling. The vines grow on dark red Oakleaf soils at around 300 metres above sea level. A cool West Coast climate shapes the wine’s bright aromatics and naturally fresh acidity.
The team harvested the grapes early in the morning at 22.5° Balling and whole-bunch pressed them. After two days of settling, the juice fermented slowly in stainless-steel tanks at low temperatures. The cellar team stopped fermentation early to retain natural sweetness. The result is an aromatic, refreshing Riesling with gentle sweetness, crisp balance, and excellent food-pairing appeal.
