Produced from our dryland farmed vineyards in Darling, approximately 8km from the Atlantic Ocean on the west coast of South Africa. The vines are all trellised and planted on deep, red oakleaf soils. Viticultural techniques have evolved and include monitoring the vineyards for optimal picking times, adopting a combination of sampling, weekly vine and analysis monitoring, and tasting to optimize the richer tropical notes.

Food Pairing

White meats including chicken, pork chops and fish (particularly trout, mussels and crayfish). Also pairs well with our goat’s milk Crottin cheese and plain feta.

Tasting Notes

Pale straw with a green tinge in the glass. Potent aromas of grapefruit, lemon and lime with ripe figs and granadilla and more. The palate is fresh with lengthy acidity, expressive of the cool climate in Darling. Mid-palate sweetness with tropical fruit flavours, and a salivating dry finish. Drink within the next 1 – 2 years.


More details

The grapes are machine harvested early in the morning, arriving at the cellar before sunrise. The harvester has a sorting action which only selects whole berries. These whole berries are then gently pressed, after which the juice is settled for 48 hours and then racked into stainless steel tanks for fermentation. Conditions during fermentation are managed to preserve and accentuate the tropical “thiolic” profile inherent to Sauvignon Blanc. The wine was left on its fine lees for 2 months after fermentation, prior to blending, stabilization, and finally bottling.
