The Fairview Darling Sauvignon Blanc 2025 comes from dryland vineyards close to the West Coast, where cool breezes and Oakleaf soils naturally enhance citrus and tropical flavour. The vineyard team monitored each block through tasting and sampling, ensuring the grapes were picked at the perfect moment.
The fruit was harvested early in the morning and pressed as whole berries. After settling for 48 hours, the juice fermented slowly in stainless steel to preserve the crisp, cool-climate aromatics. The wine then rested on fine lees for three months to build texture and length.
Sauvignon Blanc 2025 is zesty, expressive and refreshing. Tropical fruit, fig, lemon, lime and soft herbal notes define the palate. Fresh acidity gives the wine lift, while a touch of sweetness adds balance before the dry finish.
