Fairview Darling Sauvignon Blanc 2025 captures the cool coastal charm of Darling, one of South Africa’s finest Sauvignon Blanc regions. The vineyards lie just 8km from the Atlantic Ocean, where sea breezes cool the vines and help the grapes ripen slowly. Deep red oakleaf soils give the vines strength and allow them to produce fruit with both concentration and purity. Careful monitoring of the vineyards ensured that grapes were picked at the ideal time, preserving bright flavours and natural balance.

Harvesting took place between 29 January and 25 February 2025. Grapes were picked in the early morning, arriving at the cellar cool and fresh. The modern harvesting machines selected whole berries, which were then gently pressed. After a 48-hour settling period, the juice moved to stainless steel tanks. Fermentation was managed to protect the grape’s tropical profile. Once fermentation ended, the wine rested on fine lees for three months, adding texture and depth before blending and bottling.

In the glass, Fairview Darling Sauvignon Blanc 2025 shows a pale straw colour with a green tinge. Aromas of tropical fruit, fig, lemon, and lime rise immediately, lifted by fresh herbal notes. On the palate, the wine is crisp and expressive, offering sweet tropical fruit at the mid-palate, balanced by lively acidity. The finish is long, dry, and refreshing, showcasing the influence of Darling’s cool coastal climate.

This Sauvignon Blanc is best enjoyed young, within one to two years, when its fruit and freshness are at their peak. It pairs beautifully with chicken, pork chops, trout, mussels, and crayfish. In addition, it finds a natural partner in Fairview’s own cheeses, especially goat’s milk Crottin and plain feta. Together, wine and cheese highlight the heritage of Fairview and its tradition of crafting both distinctive wines and artisanal cheeses.
