This case includes six bottles of Fairview Darling Sauvignon Blanc 2025, sourced from dryland vineyards in Darling, mainly Alexanderfontein, about 8km from the West Coast.
Trellised vines grow in deep red Oakleaf soils, which support purity and structure. The team closely monitored the vineyards to determine the ideal picking window and enhance tropical expression.
Harvest ran from 29 January to 25 February 2025. The team machine harvested the grapes early in the morning and gently pressed whole berries. After 48 hours of settling, the juice fermented in stainless steel under controlled conditions to preserve the tropical “thiolic” profile.
The wine rested on fine lees for three months before blending and bottling. The result is a bright, coastal Sauvignon Blanc with freshness and clarity.
