Fairview Eenzaamheid Shiraz 2021 originates from the historic Eenzaamheid farm in Paarl, first established in 1699. Its name, meaning “solitude,” reflects the farm’s remote beauty. Today, Christo Briers-Louw continues his family’s long stewardship of this land, where gravelly, decomposed shale soils help Shiraz ripen naturally without irrigation. The result is a wine that captures depth, character, and a true sense of place.
The grapes were handpicked at 25° Balling and delivered to the cellar in small lug boxes. The winemaking team destalked and hand-sorted every bunch, removing under-ripe berries and stalks. Only pristine fruit went into open French oak foudres for fermentation. Manual punch-downs and pump-overs during fermentation enhanced colour and structure. After gentle basket pressing, the wine underwent malolactic fermentation in 25% new French oak barrels. The rest matured in second and third fill barrels for balance. After 22 months of ageing, the team selected the finest barrels and bottled the wine with minimal filtration.
