Fairview grows the Verdelho on the slopes of the farm in southern Paarl. Warm summer days help the grapes ripen, while cooler conditions keep the wine fresh and vibrant. Inspired by Portugal's Vinho Verde style, this wine offers a light body, lower alcohol and a gentle fizz.
The team harvests the grapes in January before gently crushing and pressing them. They cold ferment the free-run juice in stainless steel tanks. Afterwards, the wine rests on its fine lees to build extra complexity. Finally, they add a gentle fizz at bottling to lift the wine's freshness.
