The vineyards were hand-picked early morning and transferred directly to the press. The grapes were left whole to allow for a gentle pressing action, only using the free run juice for final alcoholic fermentation. The individual components were fermented in a combination of stainless steel tanks, clay amphorae and oak barrels. 20% of the Paarl wine was transferred to older 225L French oak barrels (3rd fill) for extended lees contact, adding creaminess and texture to the final wine. A small parcel of Paarl grapes was fermented and aged in clay amphorae. This component remains fresh on the nose with lots of texture from the lees contact inside the clay pot. The wine was allowed to age for 10 months before final blending, filtration and bottling.

Food Pairing

Enjoy with seared tuna and Asian spices or a cold beef fillet salad. Pairs well with a chicken casserole or simply enjoy with a cheese platter.

Tasting Notes

Light golden colour with aromas of hay, fresh citrus, stone fruit and a hint of fresh herbs and flowers. Fresh, crunchy fruit, apple and peach on the palate followed by a creamy texture and typical minerality on the finish. Drink now or cellar for another 2-3 years.

Produced from two distinct vineyard blocks, each with its very own expression of the variety, both adding depth and complexity to the final blend. The high lying Paarl vineyard is planted in decomposed granite soils on the south facing slopes of Paarl Mountain and provides fruity aromas and weight to the final wine. The cooler climate bush vine vineyard from Darling is planted in richer Malmesbury shale soils and enjoys a cool ocean breeze from the Atlantic Ocean. This contributes to the fresh acidity and subtle flower notes.
