Food Pairing

A winner for any dinner party. Homtini suits most Italian style dishes – be it rich tomato-based pastas or flavourful pork tenderloin.

Tasting Notes

Youthful, bright cherry red in the glass. The nose invites with plum and mulberries, with hints of forest floor and oak spice. The palate is medium bodied with red berry fruit and warm spice flavours. Cool-climate acidity and firm, fine tannin structure makes for an age worthy wine. Will evolve excellently, keep for 5 – 8 years.

The Sangiovese grapes were hand sorted and fermented in “foudre”, with a small percentage of whole bunches included in the fermenter. The other grape varieties were gently crushed (partial whole berries), destemmed and fermented in stainless steel tanks with pump-overs occurring three times a day. After fermentation, the Cabernet Sauvignon and Merlot spent some extra time on the skins and were matured for 20 months oak barrels and seasoned American oak. The Sangiovese and Shiraz is matured in older French oak barrels. The final barrel selection composition is 30% new French oak (from Cabernet Sauvignon and Merlot). The blend is put together showcasing the best of the Darling region.

  • Beautiful and very usual complex wine. Brilliant addition to the Fairview Family. Been drinking wines from your estate since 1970's. My Dad used to get them railed up to whats now Zim. When l came down here, at farm often and resturant. Not going to change. Love it
