Fairview La Beryl Blanc 2022 is produced from Chenin Blanc and Muscat Blanc grapes grown on decomposed granite soils on the Fairview wine farm. The vineyards are carefully managed to achieve healthy fruit and balanced ripening. Each bunch is hand-harvested over a three-day period, with only perfectly ripe grapes selected for this special wine.
Once harvested at approximately 21° Brix, the grapes are packed into small lug boxes and transported to a well-ventilated shed. There, they are carefully laid out on straw-lined racks to dry naturally. This drying process lasts three to four weeks, during which the grapes lose about 75% of their moisture and reach an almost raisin-like state. On 2 March 2022, the dried grapes were crushed, pressed, and transferred to stainless steel tanks for fermentation.
Fermentation continued slowly for up to six months, adding depth and complexity. The result is a dessert wine that reflects both patience and precision in every drop.
