Fairview Pegleg Carignan 2020 is made from grapes grown in South Africa’s oldest Carignan vineyard, planted in 1981. The fruit comes from the Basson family’s bush vines on the Swartland side of the Perdeberg Mountain. These vines thrive in Malmesbury shale soils, producing grapes that bring both elegance and complexity to the wine.
The 2020 harvest took place on 18 February, with grapes hand-picked at 23.5° Balling. After harvesting, the fruit was destalked, hand-sorted, and lightly crushed, with 20% whole bunches placed at the bottom of the fermentation tank. Fermentation occurred in French oak foudres with regular pump-overs to ensure gentle extraction of colour and flavour. Once fermentation finished, the wine completed malolactic fermentation in third to fifth fill French oak barrels, followed by 11 months of maturation. Only the best barrels were selected for bottling after a light filtration.
