More details

Fairview Primo Pinotage 2012 is part of the Vinotéque Collection, showcasing the care and precision behind this flagship red. The grapes come from dryland vineyards in Agter-Paarl, where the vines grow in duplex Glenrosa and Klapmuts soils. These well-drained soils, with a water-retentive sublayer, help the vines produce fruit with natural balance and depth.

The team grafted the vines onto R99 rootstock and trained them on trellises to manage sunlight and airflow. During the 2012 season, they reduced the crop to one or two bunches per shoot, concentrating flavour and texture in every berry. Harvest took place on 28 February 2012 at 25.8° Balling, when the fruit reached peak ripeness.

Winemakers destalked and sorted the grapes by hand to remove raisins and green stems. Fermentation took place in open-top French oak foudres, with manual punch-downs twice daily to extract colour and structure. After basket pressing, the wine moved into French and American oak barrels for malolactic fermentation and 16 months of ageing, with 45% new oak enhancing complexity.
