Fairview Riesling 2025 comes from unirrigated vineyards near Darling on South Africa’s cool West Coast. The vines grow on red Oakleaf soils about 300 metres above sea level, where the coastal climate helps the grapes ripen slowly while keeping bright natural acidity.
The grapes were harvested early in the morning and whole-bunch pressed. After settling for two days, the juice fermented slowly in stainless steel tanks at cool temperatures. The team stopped fermentation early to preserve natural residual sugar, creating a lively off-dry style.
The result is a vibrant expression of South African wine with citrus freshness, soft stone-fruit flavours and a gentle touch of sweetness. Fairview Riesling 2025 drinks beautifully now but can also develop additional complexity over the next few years.
