Fairview Riesling 2025 comes from unirrigated vineyards near Darling on the cool West Coast. These vineyards grow on dark red Oakleaf soils about 300 metres above sea level. The coastal climate helps the grapes keep bright acidity and vibrant fruit character.
The team harvested the grapes early in the morning at 22.5° Balling. They whole-bunch pressed the fruit and allowed the juice to settle for two days. Fermentation took place in stainless steel tanks at cool temperatures. The winemakers stopped fermentation early to retain the wine’s natural sweetness.
The result is a lively off-dry Riesling with citrus, stone fruit and floral notes. This case of six is ideal for sharing, cellaring, or enjoying with flavourful dishes.
