The grapes used in the Fairview Shiraz is sourced from a selection of our vineyards located predominantly on the south-western slopes of Paarl Mountain on decomposed granite soils. Complimentary components of the blend are from dryland vineyards from our cooler Atlantic vineyards in Darling as well as some Swartland parcels.
WINEMAKING:
Grapes from different vineyard sites and regions were fermented separately. All parcels were destalked and lightly crushed before fermentation. Fermentation on the skins for approximately 10 days and then pressed. Malolactic fermentation was completed in oak barrels with a small portion remaining in tank. The wine was racked and sent to barrel for 20 months, aged in French oak with approximately 20% new wood being used. The components were then selected, blended and bottled.
