Fairview Shiraz 2022 comes from a selection of excellent vineyard sites across the Coastal region. The final blend includes fruit from dryland vineyards in the cooler Atlantic-influenced Darling area, parcels from the Swartland and a high-altitude vineyard in Paarl. Each region adds character, structure and depth to the wine.
The team harvested the grapes between 3 and 14 March 2022. Each vineyard parcel fermented separately after the grapes were destalked and lightly crushed. The wine fermented on the skins for about ten days before pressing. Malolactic fermentation took place in oak barrels, with a small portion remaining in tank.
The wine matured for twenty months in French oak barrels, including about twenty percent new oak. After ageing, the winemaking team selected the best components, blended them and bottled the final wine.
