The character of Fairview Shiraz 2023 starts with vineyards across the Coastal Region. Dryland sites in Darling and Swartland benefit from cooler Atlantic influences. Meanwhile, elevated Paarl vineyards bring ripe fruit, depth and structure. Together, these contrasting sites create a layered expression of Shiraz.
In the cellar, the team keeps fruit from each vineyard separate. This allows every site to retain its own character. The team destalks and gently crushes the grapes before fermentation. Regular extraction builds colour, flavour and tannin. Afterwards, most of the wine completes malolactic fermentation in oak, while a smaller portion remains in tank.
The wine then matures in French oak. Finally, the team selects and blends the individual parcels. This careful approach brings the fruit, spice and structure into balance without losing the character of each vineyard.
