Deep ruby in colour, the wine opens with ripe blackberries, dark cherries and plum. Black pepper and subtle savoury spice follow. The Fairview Shiraz 2023 Case of 6 brings together fruit from selected vineyards across the Coastal Region. Each site plays its part in shaping the final wine. Cooler Darling and Swartland vineyards add freshness and spice. Meanwhile, elevated Paarl vineyards contribute ripe fruit, depth and structure.
Fairview keeps each vineyard parcel separate in the cellar. The team gently crushes the grapes before fermentation and uses regular extraction to build colour and flavour. Afterwards, most of the wine completes malolactic fermentation in oak. A smaller portion remains in tank.
The wine then matures in French oak. Finally, the team selects and blends the individual parcels. This brings together the fruit, spice and structure while keeping the character of the different vineyards at heart.
