Fairview Shiraz 2022 Case of 6 includes six bottles of this expressive red wine made from carefully selected vineyard sites. The blend includes fruit from dryland vineyards in the cooler Atlantic-influenced Darling area, parcels from the Swartland and a high-altitude vineyard in Paarl. Each region adds character, structure and depth to the wine.
The grapes were harvested between 3 and 14 March 2022. Each vineyard parcel fermented separately after the fruit was destalked and lightly crushed. The wine remained on the skins for about ten days before pressing. Malolactic fermentation took place in oak barrels, while a small portion stayed in tank.
The wine matured for twenty months in French oak barrels, including about twenty percent new oak. The winemaking team then selected the best components, blended them and bottled the final wine.
