This case features six bottles of Fairview Shiraz 2021, crafted from vineyards on the south-western slopes of Paarl Mountain. Decomposed granite soils bring purity, spice, and bright fruit character. The cool, late 2021 season allowed slow ripening, which added freshness and depth to the wine.
The team harvested the grapes between 25 February and 1 March. They destemmed and lightly crushed each parcel before fermenting them separately. The wine spent around ten days on the skins to build colour and gentle tannin. Malolactic fermentation took place in French oak barrels, with 20% new wood adding subtle spice and texture. The wine then matured for 20 months before blending and bottling. The result is a polished, fruit-forward Shiraz that balances richness with finesse.
