The grapes were handpicked at 27 degrees Balling. Bunches were destalked and crushed. The juice was fermented until the Balling was around 18 degrees (by then around 6% alcohol). Fermentation takes 4-5 days, during which time maximum colour and flavour extraction is achieved with long pump overs. The wine is pressed off the skins and fortified with pot stilled, unaged brandy spirit (89% alcohol) which stops the alcoholic fermentation.

This sweet red is then aged in older French oak barrels and matured for approximately 10-12 months, before blending and bottling. The sweetness comes from the natural sugars in the grape. A small percentage of reserve fortified sweet wine, aged in barrel for five and half years, is blended for added complexity.

Tasting Notes

Dark ruby red colour in the glass with rich aromas of ripe plum, fruitcake mix with warm spices from oaking. The palate has balanced spice and dark fruit flavours, structure and a sweet finish. Perfect for warming up on a cold evening or to enjoy with dessert.

The Petite Sirah grapes were harvested from trellised vineyards planted on decomposed granite soils on the upper slopes of Fairview farm in Paarl. A small percentage vintage Tempranillo (WO Paarl) and Souzão (WO Swartland) fortified wines are included to added layers and complexity to the Cape Ruby style.

Petite Sirah (also known as Durif) is a natural crossing of Syrah and Peloursin, discovered by Professor François Durif in the south of France in 1880. Its intense colour and good tannin structure makes it an excellent blending partner. It thrives in warm climates, both here in Paarl and in the Swartland. The Souzão and Tempranillo are traditional Port-style varieties, fitting for this Port style of wine.
