The Fairview Beacon Shiraz 2021 comes from a special dryland vineyard on a rocky Glenrosa outcrop in the Swartland. This site sits above ancient metamorphic shale, where unirrigated bush vines have to push deep between the stones to find moisture. The Dreyer family has farmed this land since 1705, and their experience with dryland viticulture brings intensity and character to the fruit.
The grapes were hand-harvested on 24 February 2021, two weeks later than usual due to the cooler season. All berries were destemmed and sorted by hand. Only clean, ripe fruit went into the French oak foudres. Fermentation started naturally, with punch-downs and pump-overs done up to three times a day. After fermentation, the wine spent two days on the skins before being basket-pressed. It then matured for 18 months in French oak, with 35% new barrels adding depth and spice.
Beacon Shiraz 2021 is dark, powerful and refined. Expect plum, berries, liquorice, pepper, charcuterie and dried olives, all carried by firm, powdery tannins. It’s a standout in the Fairview wines collection and a strong expression of South African red wine from top wine farms South Africa.
