This case includes six bottles of Fairview Viognier 2022, crafted from vines first planted at Fairview in 1994. Charles Back and his team established the mother block of Viognier in South Africa and have continued to refine its expression over the years, producing a wine known for aroma, elegance, and balance.
The team handpicked the grapes early in the morning and whole-bunch pressed them, using only free-run juice. Fruit from Darling made up 36% of the blend and fermented in stainless steel, contributing freshness and lift. Paarl fruit accounted for the remaining 64% and fermented in French oak barrels, with only 10% new oak and the rest second- and third-fill barrels. After fermentation, the wine matured on its lees with regular bâtonnage. The team racked the wine after nine months, blended the components, then filtered and bottled. The result is a layered, polished Viognier with depth and finesse.
