The team hand-harvested the grapes at 21° Balling. They crushed and pressed the fruit gently, then let it settle for 48 hours. Only the free-run juice went into stainless steel tanks for cool fermentation. The wine rested briefly on fine lees to add a soft texture while keeping the style fresh.
