Fairview Lanner Hill Syrah 2021 comes from Lanner Hill Farm in Darling, owned and managed by the Fairview Wines team. The vines grow in deep red shale and granite soils, with cool ocean air drifting in from the Western Coast each afternoon. These conditions create a fresher, more refined expression of the classic Syrah variety rather than riper Shiraz in style.
The grapes were harvested on 17 March 2021, around two to three weeks later than usual. The team picked at 22.5–23.5 °B to preserve acidity and natural brightness. They added 20% whole-bunch clusters to French oak foudres before layering destemmed, hand-sorted grapes on top. Fermentation started naturally with indigenous yeast. Gentle punch-downs and pump-overs, done up to three times daily, drew out colour and flavour over ten days.
After pressing, the wine completed malolactic fermentation in older French oak barrels. It then matured for 18 months, after which the winemakers selected the best barrels and bottled the wine with minimal filtration to retain purity.
