The team harvested the grapes early in February 2025, picking in the morning to keep the fruit cool. Gentle pressing followed, after which the juice settled naturally. A long, slow fermentation took place in stainless-steel tanks. The wine then rested on fine lees for several weeks to add texture while keeping the style bright and fruit-driven. The result is a focused, mineral Sauvignon Blanc with clarity and energy.
