Tasting Notes
Beautiful bright burgundy in the glass with an intense nose of black plums, dark berry compote, salty liquorice, herbs and pepper spice. The palate is full bodied and layered with black berries, cherries and warm baking spice. Firm, powdery tannins fill the mid-palate, while balanced acidity adds freshness and length. Elegant and approachable now, this wine will reward cellaring for eight to ten years.
More details
Cyril Back 2021 comes from Fairview’s best vineyard sites of the vintage. A mild growing season with no heat waves created ideal ripening conditions and excellent flavour development. The Shiraz comes from a cool dryland bush vine site in Darling and a spice-driven Paarl vineyard. Cabernet Sauvignon from Stellenbosch adds depth and ageing potential.
The team handpicked the fruit at 24.5 to 25° Balling and hand sorted every bunch. They fermented each vineyard lot separately in open oak foudres with natural fermentation and manual punch-downs twice daily. After fermentation, the wine spent extra time on the skins before gentle basket pressing.
The wine completed malolactic fermentation in French oak barrels and matured for twenty months in a selection of new, second-fill and third-fill barrels. Only eight barrels, with forty percent new oak, were chosen for the final blend. The team bottled the wine in February 2023 unfined with minimal filtration.
