The Fairview Shiraz 2021 brings together fruit from the south-western slopes of Paarl Mountain, where decomposed granite soils give the wine purity, spice and bright fruit character. The cool and late 2021 season helped the grapes ripen slowly, adding freshness and layered flavour.
The team harvested the grapes between 25 February and 1 March. They destemmed and lightly crushed each parcel before fermenting them separately. The wine spent about ten days on the skins to build colour and gentle tannin. Malolactic fermentation took place in French oak barrels, with 20% new wood adding subtle spice and texture. After this, the wine matured for 20 months before blending and bottling.
Shiraz 2021 is rich but refined, showing black pepper, red berries, plum and a soft lavender lift. The palate is smooth and plummy with spice and an elegant finish.
